Hearty Bean and Corn Medley
A vibrant and refreshing salad featuring black beans, sweet corn, and a zesty lime dressing. Perfect for any occasion, this simple dish delivers a burst of flavor with every bite.

Ingredients
1 (15 oz) can of black beans, drained and rinsed
1 (15 oz) can of corn, drained
1 red bell pepper, diced
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
1 jalapeño, seeded and minced
2 tbsp olive oil
2 tbsp fresh lime juice
1 tsp ground cumin
Salt and pepper to taste
Instructions
1. In a large bowl, combine the black beans, corn, red bell pepper, red onion, cilantro, and jalapeño.
2. In a small bowl, whisk together the olive oil, lime juice, cumin, salt, and pepper.
3. Pour the dressing over the bean and corn mixture and toss gently to combine.
4. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
5. Stir well before serving.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Enjoy chilled or bring to room temperature before serving; reheating is not necessary.
