Grilled Veggie and Hummus Wrap

Ingredients
1 whole wheat wrap
1 small zucchini, sliced lengthwise
1 red bell pepper, sliced
1 small eggplant, sliced into rounds
2 tbsp olive oil
Salt and pepper to taste
1/4 cup hummus
1 tbsp lemon juice
1 tbsp chopped fresh parsley
Instructions
1. Preheat the grill to medium-high heat.
2. In a bowl, toss the zucchini, bell pepper, and eggplant slices with olive oil, salt, and pepper.
3. Grill the vegetables for 3-4 minutes on each side or until tender and lightly charred.
4. Spread hummus evenly over the whole wheat wrap.
5. Arrange the grilled vegetables on top of the hummus.
6. Sprinkle with lemon juice and chopped parsley.
7. Roll the wrap tightly and slice in half to serve.
Storage
Store the wrap in an airtight container in the refrigerator for up to 2 days.
Reheating
Reheat the wrap in a skillet over medium heat for 2-3 minutes on each side, or until warmed through.
