Grilled Sausage Skewers

Ingredients
1 lb of Italian sausage, cut into 1-inch pieces
2 medium bell peppers (one red, one yellow), cut into 1-inch squares
1 large onion, cut into 1-inch squares
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
Wooden or metal skewers
Instructions
1. Preheat your grill to medium-high heat.
2. In a large bowl, combine the sausage, bell peppers, and onion. Drizzle with olive oil, and season with salt and black pepper. Toss to coat evenly.
3. Thread sausage, bell peppers, and onion alternately onto skewers.
4. Place skewers on the grill and cook for 10-12 minutes, turning occasionally, until the sausage is cooked through and the vegetables are tender and slightly charred.
5. Remove skewers from the grill and let rest for a few minutes before serving.
Storage
Store leftover skewers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat skewers on a grill or in the oven at 350°F for about 10 minutes until heated through.
