Grilled Peach Caprese Salad

Ingredients
2 ripe peaches
8 oz fresh mozzarella, sliced
1 cup cherry tomatoes, halved
1/4 cup fresh basil leaves
2 tbsp extra virgin olive oil
1 tbsp balsamic glaze
Salt and pepper to taste
Instructions
1. Preheat your grill to medium-high heat.
2. Slice peaches into halves and remove the pits.
3. Lightly brush the peach halves with olive oil.
4. Place the peaches on the grill, cut side down, and grill for 2-3 minutes until they have nice grill marks.
5. Remove the peaches from the grill and let them cool slightly.
6. Slice the grilled peaches into wedges.
7. On a serving platter, arrange the mozzarella slices, grilled peach wedges, and cherry tomato halves.
8. Scatter fresh basil leaves over the top.
9. Drizzle with extra virgin olive oil and balsamic glaze.
10. Season with salt and pepper to taste. Serve immediately.
Storage
Store any leftovers in an airtight container in the refrigerator for up to 2 days.
