Grilled Chicken Skewers with Peanut Sauce

Ingredients

2 lbs chicken breast, cut into 1-inch pieces
1/2 cup soy sauce
2 tbsp honey
1 tbsp sesame oil
2 cloves garlic, minced
1 inch ginger, grated
1/2 cup smooth peanut butter
1/4 cup coconut milk
2 tbsp lime juice
1 tbsp soy sauce
1 tbsp brown sugar
1/4 tsp chili flakes
Salt and pepper to taste
Chopped cilantro for garnish
Lime wedges, for serving

Instructions

1. In a bowl, mix soy sauce, honey, sesame oil, garlic, and ginger. Add chicken pieces and marinate for at least 30 minutes.
2. Preheat the grill to medium-high heat.
3. Thread marinated chicken pieces onto skewers.
4. Grill chicken skewers for 4-5 minutes on each side until fully cooked.
5. In a small saucepan over low heat, combine peanut butter, coconut milk, lime juice, soy sauce, brown sugar, and chili flakes. Stir until smooth and heated through.
6. Serve grilled chicken skewers with peanut sauce, garnished with cilantro and lime wedges.

Storage

Store chicken skewers in an airtight container in the refrigerator for up to 3 days. Keep the peanut sauce in a separate container.

Reheating

Reheat chicken skewers in the microwave or on a skillet over medium heat until heated through. Serve with peanut sauce at room temperature or slightly warmed.
