Ingredients

2 ripe avocados
1 cup cooked prawns, chopped
1/2 cup diced tomatoes
1/4 cup chopped cilantro
1 lime, zested and juiced
1 tablespoon olive oil
Salt and pepper, to taste
1/4 teaspoon red pepper flakes
1/4 cup finely diced red onion

Instructions

1. Preheat grill to medium-high heat.
2. Cut avocados in half and remove the pits.
3. Brush the cut sides of the avocados with olive oil and season with salt and pepper.
4. Place avocados cut-side down on the grill, and cook for 4-5 minutes until grill marks appear.
5. In a bowl, combine chopped prawns, diced tomatoes, cilantro, lime zest, lime juice, olive oil, red onion, red pepper flakes, salt, and pepper.
6. Remove avocados from grill and fill each half with the prawn salsa mixture.
7. Serve immediately while warm.

Storage

Store components separately in airtight containers in the refrigerator for up to 2 days.

Reheating

Reheat the avocados on a grill or in a skillet over low heat briefly, adding the salsa fresh when serving.
