Ingredients
2 large avocados, halved and pitted
3 tbsp olive oil
1 head of romaine lettuce, chopped
1/2 cup grated Parmesan cheese
1 cup croutons
1/2 cup Caesar dressing
1 lemon, juiced
1 clove garlic, minced
Salt to taste
Pepper to taste
Instructions
1. Preheat the grill to medium-high heat.
2. Brush avocado halves with 1 tbsp olive oil and season with salt and pepper.
3. Place avocados on the grill, flesh side down, for 4-5 minutes until grill marks appear.
4. In a large bowl, combine chopped romaine lettuce, Parmesan cheese, and croutons.
5. In a small bowl, whisk together Caesar dressing, remaining olive oil, lemon juice, minced garlic, salt, and pepper.
6. Dice the grilled avocados and add to the salad bowl.
7. Pour the dressing over the salad and toss to coat evenly.
8. Serve immediately for optimal flavor.
Storage
Store leftover salad without dressing in an airtight container in the refrigerator for up to 2 days.
Reheating
To reheat, if necessary, gently warm the grilled avocado pieces in a skillet over medium heat for 1-2 minutes before adding to fresh salad greens.
