Ingredients
2 lbs baby potatoes, halved
3 tbsp olive oil
2 tsp sea salt
1 tsp black pepper
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
1 tbsp fresh oregano, chopped
2 cloves garlic, minced
1/2 tsp smoked paprika
Instructions
1. Preheat your oven to 425°F (220°C).
2. In a large bowl, combine the halved baby potatoes with olive oil, sea salt, black pepper, rosemary, thyme, oregano, garlic, and smoked paprika. Toss until potatoes are evenly coated.
3. Arrange the potatoes in a single layer on a baking sheet lined with parchment paper.
4. Roast in the preheated oven for 25-30 minutes, turning once halfway through, until the potatoes are golden brown and crispy.
5. Remove from the oven and let cool slightly before serving.
