Golden Potato Cheese Casserole
An inviting and delightful casserole featuring layers of tender potatoes and gooey cheese, ideal for family dinners or festive gatherings.

Ingredients
4 lbs russet potatoes, peeled and sliced
1 medium onion, finely chopped
3 cups cheddar cheese, shredded
1 cup sour cream
1 can (10.5 oz) cream of chicken soup
1/2 cup unsalted butter, melted
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/4 cup fresh chives, chopped
Instructions
1. Preheat oven to 350°F (175°C).
2. Grease a 9x13 inch baking dish.
3. In a large bowl, combine sour cream, cream of chicken soup, melted butter, salt, pepper, and garlic powder. Mix well.
4. Stir in sliced potatoes and chopped onion until coated.
5. Spread half of the potato mixture in the prepared baking dish.
6. Sprinkle 1 1/2 cups of cheddar cheese over the layer.
7. Add the remaining potato mixture on top and sprinkle with the remaining cheddar cheese.
8. Cover with aluminum foil and bake for 60 minutes.
9. Remove foil and bake for an additional 15 minutes until cheese is bubbly and golden.
10. Garnish with chopped chives before serving.
Storage
Refrigerate in an airtight container for up to 3 days.
Reheating
Preheat oven to 350°F and heat for 15-20 minutes or until hot.
