Golden Pan-Fried Zucchini

Ingredients

2 medium zucchinis
1 cup all-purpose flour
1 tsp salt
1/2 tsp black pepper
2 large eggs
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
1/4 cup olive oil

Instructions

1. Slice the zucchinis into 1/4-inch thick rounds.
2. In a shallow dish, mix the flour, salt, and black pepper.
3. In another dish, beat the eggs.
4. In a third dish, combine breadcrumbs and Parmesan cheese.
5. Dredge each zucchini slice in flour, then dip in beaten eggs, and coat with breadcrumb mixture.
6. Heat olive oil in a large skillet over medium heat.
7. Fry zucchini slices in batches for 2-3 minutes on each side until golden brown.
8. Transfer to a paper towel-lined plate to drain excess oil.
9. Serve immediately while hot.

Storage

Store cooled leftovers in an airtight container in the refrigerator for up to 2 days.
