Golden Crushed Potatoes

Golden Crushed Potatoes are a delightful and rustic side dish featuring crispy exteriors with soft, fluffy interiors, perfect for any dinner table.

Ingredients

2 lbs small new potatoes
1/4 cup olive oil
1 tsp sea salt
1/2 tsp black pepper
1 tsp garlic powder
1 tbsp fresh rosemary, chopped

Instructions

1. Preheat your oven to 450°F (232°C).
2. Boil the potatoes in a large pot of salted water until fork-tender, about 15 minutes.
3. Drain the potatoes and let them cool slightly on a baking sheet.
4. Using a flat-bottomed glass or potato masher, gently press down on each potato until they are about 1/2 inch thick.
5. Drizzle olive oil over the potatoes and season with salt, pepper, and garlic powder.
6. Sprinkle fresh rosemary over the top.
7. Roast in the oven for 25-30 minutes until golden and crispy.
8. Serve immediately.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a preheated oven at 350°F (177°C) for 10 minutes or until heated through.
