Ingredients

1 lb boneless, skinless chicken breast, cut into thin strips
2 tbsp gluten-free soy sauce
1 tbsp cornstarch
2 tbsp vegetable oil
2 cloves garlic, minced
1 inch ginger, minced
1 red bell pepper, sliced
1 cup broccoli florets
1 cup snap peas
2 green onions, chopped
1 tbsp sesame oil
Sesame seeds for garnish

Instructions

1. In a bowl, combine chicken strips with gluten-free soy sauce and cornstarch, mixing well to coat.
2. Heat vegetable oil in a large skillet or wok over medium-high heat.
3. Add chicken to the skillet and stir-fry until cooked through, about 5 minutes.
4. Remove chicken from the skillet and set aside.
5. In the same skillet, add garlic and ginger, stir-frying for 30 seconds until fragrant.
6. Add red bell pepper, broccoli, and snap peas, stir-frying for 3-4 minutes until tender-crisp.
7. Return the chicken to the skillet along with green onions and sesame oil, stirring to combine.
8. Serve hot, garnished with sesame seeds.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a skillet over medium heat until warmed through or in a microwave on medium power in 30-second intervals.
