Ginger Peach Cobbler

Ingredients
6 ripe peaches, peeled and sliced
1 tablespoon lemon juice
1/2 cup granulated sugar
1/4 cup brown sugar
1 teaspoon ground ginger
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 tablespoon cornstarch
1 cup all-purpose flour
1/2 cup rolled oats
1/2 cup cold unsalted butter, cubed
3/4 cup buttermilk
1 teaspoon vanilla extract
Instructions
1. Preheat your oven to 375°F (190°C).
2. In a large bowl, combine the sliced peaches and lemon juice.
3. Add the granulated sugar, brown sugar, ground ginger, cinnamon, salt, and cornstarch to the peaches. Mix well and set aside.
4. In another bowl, mix together the flour, oats, and cubed butter. Use your fingers to incorporate the butter until the mixture resembles coarse crumbs.
5. Add the buttermilk and vanilla extract to the flour mixture and stir until just combined.
6. Pour the peach mixture into a greased 9x13 inch baking dish.
7. Drop spoonfuls of the batter over the peaches, covering as much of the fruit as possible.
8. Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and cooked through.
9. Allow to cool slightly before serving.
Storage
Store any leftover cobbler in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, place a portion of cobbler in the microwave on medium power for 1-2 minutes or until warmed through, or reheat in a 350°F oven for 10-12 minutes.
