Ingredients

4 large russet potatoes, peeled and sliced
2 cups shredded sharp cheddar cheese
1/2 cup grated Parmesan cheese
3 cloves garlic, minced
1/2 cup unsalted butter
1 cup heavy cream
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon fresh thyme, chopped
1 tablespoon fresh parsley, chopped

Instructions

1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
2. Arrange half of the sliced potatoes in an even layer at the bottom of the baking dish.
3. In a saucepan over medium heat, melt the butter and add the minced garlic. Sauté until fragrant, about 1 minute.
4. Stir in the heavy cream, salt, and pepper; bring to a gentle simmer.
5. Remove the saucepan from heat and pour half of the cream mixture over the potatoes.
6. Sprinkle half of the cheddar cheese and half of the Parmesan cheese over the top.
7. Layer the remaining potatoes over the cheese and repeat with the remaining cream mixture and cheeses.
8. Cover the baking dish with foil and bake in the preheated oven for 45 minutes.
9. Remove the foil and bake for an additional 15 minutes, until the top is golden and bubbly.
10. Garnish with fresh thyme and parsley before serving.

Storage

Allow to cool before storing. Keep in an airtight container in the refrigerator for up to 3 days.

Reheating

Preheat oven to 350°F (175°C), cover with foil and bake for 20 minutes or until heated through.
