Garden Vegetable American Chop Suey

Ingredients
1 lb ground turkey
1 large onion, diced
1 green bell pepper, chopped
1 red bell pepper, chopped
2 cloves garlic, minced
2 cups fresh spinach, chopped
1 can (14 oz) diced tomatoes
1 cup tomato sauce
1 tbsp olive oil
1 tsp dried oregano
1 tsp dried basil
1/2 tsp black pepper
1/2 tsp salt
8 oz elbow macaroni
1 cup shredded mozzarella cheese
Instructions
1. Cook the macaroni according to package instructions; drain and set aside.
2. In a large skillet, heat olive oil over medium heat.
3. Add onion, garlic, green and red bell peppers to the skillet; sauté until the onion is translucent.
4. Add ground turkey to the skillet; cook until browned.
5. Stir in diced tomatoes, tomato sauce, spinach, oregano, basil, salt, and pepper.
6. Simmer for 10 minutes, allowing flavors to meld.
7. Add cooked macaroni to the skillet; mix well to combine.
8. Sprinkle mozzarella cheese on top; cover and let the cheese melt before serving.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a skillet over medium heat or in the microwave until thoroughly warmed.
