Ingredients

3 large eggs
1/4 cup milk
1 tablespoon olive oil
1/4 cup crumbled feta cheese
1/4 cup chopped fresh spinach
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh chives
1/8 teaspoon salt
1/8 teaspoon black pepper

Instructions

1. In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined.
2. Heat olive oil in a non-stick skillet over medium heat.
3. Pour the egg mixture into the skillet, tilting to ensure the mixture covers the surface evenly.
4. Cook for about 2-3 minutes or until the edges start to set.
5. Sprinkle feta cheese, spinach, basil, and chives evenly over one half of the omelette.
6. Using a spatula, gently fold the other half of the omelette over the filled side.
7. Continue cooking for 1-2 more minutes until the omelette is fully set and the cheese is slightly melted.
8. Slide onto a plate and serve immediately.

Storage
