Fruit and Yogurt Parfaits

Ingredients
2 cups plain Greek yogurt
1 cup strawberries, hulled and sliced
1 cup blueberries
1 cup mango, diced
1/2 cup granola
2 tbsp honey
1 tsp vanilla extract
Mint leaves for garnish
Instructions
1. In a medium bowl, mix Greek yogurt with honey and vanilla extract until well combined.
2. Prepare four glass cups or bowls for serving.
3. Spoon 2 tablespoons of the yogurt mixture into each glass, spreading it evenly.
4. Add a layer of strawberries, then a layer of blueberries, and a layer of mango.
5. Repeat the layers of yogurt and fruits until the glasses are full.
6. Top each parfait with a sprinkle of granola.
7. Garnish with mint leaves before serving.
Storage
Store parfaits in an airtight container in the refrigerator for up to 2 days.
Reheating
Parfaits are best enjoyed cold and should not be reheated.
