Fig and Vanilla Bean Jam

Capture the essence of figs in a luscious jam infused with vanilla bean. Perfect for spreading on toast, topping yogurt, or serving as a pastry filling, this jam adds gourmet flair to any meal.

Ingredients

2 lbs fresh figs, stemmed and quartered
1 1/2 cups granulated sugar
1/4 cup lemon juice
1 vanilla bean, split and seeds scraped

Instructions

1. In a large pot, combine the figs, sugar, lemon juice, and vanilla bean seeds along with the pod.
2. Stir the mixture over medium heat until the sugar dissolves.
3. Increase the heat, bringing the mixture to a boil, then reduce to a simmer.
4. Cook for about 40-50 minutes, stirring occasionally, until the figs are soft and the jam thickens.
5. Remove the vanilla bean pod and discard.
6. Use an immersion blender to blend the jam to your desired consistency.
7. Pour the hot jam into sterilized jars, leaving 1/4 inch headspace, and seal tightly.

Storage

Store in a cool, dark place for up to 6 months. Once opened, refrigerate and consume within 2 weeks.

Reheating

Jam can be served at room temperature and does not require reheating.
