Ingredients
Shrimp
1 lb large shrimp, peeled and deveined
Cornstarch
1 cup cornstarch
Salt
1 tsp salt
Black Pepper
1/2 tsp black pepper
Vegetable Oil
1/2 cup vegetable oil for frying
Mayonnaise
1/2 cup mayonnaise
Sriracha Sauce
1/4 cup sriracha sauce
Honey
2 tbsp honey
Lime Juice
2 tbsp fresh lime juice
Lime Zest
1 tsp lime zest
Green Onions
1/4 cup chopped green onions
Cilantro
2 tbsp chopped cilantro leaves
Instructions
1. In a bowl, combine mayonnaise, sriracha sauce, honey, lime juice, and lime zest. Mix well and set aside.
2. In another bowl, toss shrimp with cornstarch, salt, and black pepper until well coated.
3. Heat vegetable oil in a large skillet over medium-high heat.
4. Fry shrimp in batches for 2-3 minutes on each side until golden brown and crispy.
5. Remove shrimp from skillet and place on a paper towel-lined plate to drain excess oil.
6. In a large mixing bowl, toss fried shrimp with the prepared sauce until evenly coated.
7. Garnish with chopped green onions and cilantro before serving.
Storage
Store leftover shrimp in an airtight container in the refrigerator for up to 2 days.
Reheating
For best results, reheat shrimp in an oven preheated to 350°F for 5-7 minutes until warmed through.
