Deliciously savory, these Feta and Spinach Stuffed Chicken Breasts make for a delightful main dish that combines Mediterranean flavors with a juicy, tender chicken breast wrapped in crispy bacon.

Ingredients

4 boneless chicken breasts (approx. 6 oz each)
1 cup fresh spinach, chopped
1/2 cup feta cheese, crumbled
1/4 cup sun-dried tomatoes, chopped
8 strips bacon
1 tsp garlic powder
1 tsp onion powder
1/2 tsp black pepper
1 tbsp olive oil
1/2 tsp salt

Instructions

1. Preheat your oven to 375°F.
2. Butterfly the chicken breasts carefully and season both sides with garlic powder, onion powder, salt, and black pepper.
3. In a bowl, mix the chopped spinach, crumbled feta, and sun-dried tomatoes.
4. Stuff each chicken breast with the spinach and feta mixture and fold them to close.
5. Wrap two strips of bacon around each chicken breast and secure with toothpicks.
6. Heat olive oil in an oven-safe skillet over medium-high heat.
7. Sear the chicken breasts for 2-3 minutes on each side until the bacon is crispy.
8. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through.
9. Remove toothpicks before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, place in a preheated oven at 350°F for 10-15 minutes until heated through.
