Ingredients
2 boneless chicken breasts
1 tbsp olive oil
1 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1 ripe mango, diced
1/4 cup red bell pepper, finely chopped
1/4 cup red onion, finely diced
1 tbsp fresh cilantro, chopped
1 lime, juiced
4 slices whole grain bread
2 tbsp mayonnaise
Instructions
1. Preheat grill to medium-high heat.
2. Coat chicken breasts with olive oil, smoked paprika, garlic powder, salt, and pepper.
3. Grill chicken for 6-7 minutes on each side until fully cooked.
4. While chicken is grilling, prepare the mango salsa by combining diced mango, bell pepper, red onion, cilantro, and lime juice in a bowl.
5. Toast bread slices until golden brown.
6. Spread mayonnaise on one side of each toasted bread slice.
7. Assemble the sandwich by placing grilled chicken on a bread slice, topping it with mango salsa, and covering it with another slice of bread.
Storage
Store in an airtight container in the refrigerator for up to 2 days.
Reheating
Reheat by warming in a skillet over medium heat until heated through.
