Cucumber & Avocado Herb Salad
A refreshing Cucumber & Avocado Herb Salad featuring fresh cucumbers, creamy avocados, and aromatic herbs. A perfect dish for summer gatherings or a healthy side option.

Ingredients
2 large cucumbers, sliced
2 ripe avocados, diced
1/4 cup fresh mint leaves, chopped
1/4 cup fresh parsley, chopped
1/4 cup fresh dill, chopped
1/4 cup olive oil
2 tbsp lemon juice
1 tsp salt
1/2 tsp black pepper
1/4 cup feta cheese, crumbled (optional)
Instructions
1. In a large mixing bowl, combine the sliced cucumbers and diced avocados.
2. Add the chopped mint, parsley, and dill to the bowl.
3. In a separate small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
4. Pour the dressing over the cucumber and avocado mixture and gently toss to combine.
5. If using, sprinkle the crumbled feta cheese over the top before serving.
Storage
Store in an airtight container in the refrigerator for up to 2 days.
Reheating
This salad is best enjoyed fresh, but if needed, allow it to return to room temperature for 10 minutes before serving straight from the fridge.
