Crockpot Chicken and Rice

Ingredients
4 boneless skinless chicken breasts
1 cup long-grain white rice
2 cups chicken broth
1 cup water
1 onion, chopped
2 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1 tsp dried thyme
1 cup frozen peas
1 cup sliced carrots
1/2 cup grated Parmesan cheese
Instructions
1. Place the chicken breasts in the bottom of the crockpot.
2. Add the rice, chicken broth, and water, ensuring the rice is submerged.
3. Sprinkle the chopped onion and minced garlic over the top.
4. Season with salt, pepper, and thyme.
5. Cover and cook on low for 6-7 hours or high for 3-4 hours.
6. About 30 minutes before serving, stir in the peas and carrots and continue cooking.
7. Sprinkle with Parmesan cheese just before serving.
Storage
Allow the dish to cool completely, then store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in the microwave on medium power for 2-3 minutes, or until heated through. Alternatively, reheat in a saucepan over medium heat, stirring occasionally.
