Ingredients

2 cups canned chickpeas
2 tbsp olive oil
1 tsp smoked paprika
1/2 tsp ground cumin
1/2 tsp garlic powder
1/4 tsp cayenne pepper
1/2 tsp salt
1/4 tsp black pepper
1 tbsp lemon zest
1 tbsp fresh parsley, chopped

Instructions

1. Preheat your oven to 400°F.
2. Rinse and drain the canned chickpeas, then pat them dry with a clean towel.
3. In a large mixing bowl, combine the chickpeas with olive oil, smoked paprika, ground cumin, garlic powder, cayenne pepper, salt, and black pepper. Toss until evenly coated.
4. Spread the chickpeas on a baking sheet in a single layer.
5. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until crispy and golden brown.
6. Remove from the oven and allow to cool slightly.
7. Toss the roasted chickpeas with lemon zest and fresh parsley before serving.

Storage

Store roasted chickpeas in an airtight container at room temperature for up to 3 days.

Reheating

To reheat, place them in a preheated oven at 350°F for 5-7 minutes until warm and crispy.
