Ingredients
1 cup quinoa
2 cups water
1 tbsp olive oil
1 tsp smoked paprika
1 tsp cumin
1/2 tsp salt
1/4 tsp pepper
4 cups mixed greens
1 cup cherry tomatoes, halved
1 cup black beans, rinsed and drained
1/2 cup corn kernels
1/4 cup red onion, diced
1 avocado, sliced
1/4 cup cilantro, chopped
1 lime, juiced
1/4 cup salsa
1/4 cup shredded cheese, optional (use dairy-free for vegan)
Instructions
1. Rinse quinoa under cold water and drain.
2. In a medium saucepan, bring 2 cups of water to a boil, add quinoa, reduce heat to low, cover, and let simmer for 15 minutes. Remove from heat and let sit, covered, for 5 minutes.
3. Fluff quinoa with a fork and spread out on a baking sheet to cool slightly.
4. In a large skillet, heat olive oil over medium heat. Add quinoa, smoked paprika, cumin, salt, and pepper. Cook, stirring occasionally, until quinoa is crispy, about 10 minutes.
5. In a large bowl, combine mixed greens, cherry tomatoes, black beans, corn, and red onion.
6. Add crispy quinoa to the salad mixture and toss to combine.
7. Top with avocado slices and chopped cilantro.
8. In a small bowl, mix lime juice and salsa to create a dressing. Drizzle over the salad and gently toss.
9. Serve with optional cheese sprinkled on top.
Storage
Store any leftover salad in an airtight container in the refrigerator for up to 2 days. Keep the dressing separate to maintain freshness.
Reheating
To reheat, place quinoa in a skillet over medium heat and cook until warmed through, about 5 minutes. Serve with fresh greens and toppings.
