Crispy Herbed Zucchini Slices

Ingredients

2 medium zucchinis
1 cup all-purpose flour
2 large eggs
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
1 tsp garlic powder
1 tsp onion powder
1 tbsp chopped fresh parsley
1 tbsp chopped fresh basil
1 tsp salt
1/2 tsp black pepper
1/4 cup olive oil

Instructions

1. Slice the zucchinis into 1/4-inch thick rounds.
2. In a shallow dish, place the flour.
3. In another dish, beat the eggs.
4. In a third dish, combine panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, parsley, basil, salt, and pepper.
5. Dredge each zucchini slice in flour, then dip into the eggs, and coat with the breadcrumb mixture.
6. In a large skillet, heat olive oil over medium heat.
7. Fry zucchini slices in batches until golden brown, about 3 minutes per side.
8. Drain on paper towels before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a preheated oven at 350°F for about 10 minutes or until heated through.
