Ingredients

2 cups all-purpose flour
1 cup unsalted butter, chilled and diced
1/2 tsp salt
1/2 cup cold water
1 tbsp dried thyme
1 tbsp dried rosemary
1/2 tsp garlic powder
1 tbsp olive oil for brushing

Instructions

1. In a large bowl, combine flour and salt.
2. Add diced butter into the flour, blending until the mixture resembles coarse crumbs.
3. Gradually stir in cold water until the dough holds together.
4. Wrap the dough in plastic and chill for 4 hours.
5. Preheat oven to 400°F (200°C).
6. Roll out dough into a rectangle on a floured surface.
7. Sprinkle herbs and garlic powder evenly over the dough.
8. Fold the dough into thirds, then roll out again.
9. Repeat folding and rolling two more times.
10. Cut the pastry into desired shapes and place on a baking sheet.
11. Brush with olive oil and bake for 15-20 minutes until golden brown.

Storage

Store in an airtight container at room temperature for up to 3 days.

Reheating

Reheat in a 350°F oven for 5-7 minutes until warmed through.
