Ingredients

4 boneless skinless chicken breasts (about 1.5 lbs)
1 cup all-purpose flour
3 large eggs
1 cup panko breadcrumbs
1 cup grated Parmesan cheese
1/2 cup fresh basil, chopped
1/4 cup fresh parsley, chopped
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1/2 tsp black pepper
1 cup marinara sauce
1 1/2 cups shredded mozzarella cheese
2 tbsp olive oil
1 tbsp butter

Instructions

1. Preheat your oven to 400°F (200°C) and grease a baking sheet with olive oil.
2. In a shallow bowl, mix flour, salt, and pepper.
3. In another bowl, beat the eggs.
4. In a third bowl, combine panko, Parmesan, basil, parsley, garlic powder, and onion powder.
5. Dredge each chicken breast in flour, dip in beaten eggs, then coat with the panko mixture, pressing to adhere.
6. Heat olive oil and butter in a skillet over medium heat and brown the chicken breasts for 3-4 minutes per side until golden.
7. Transfer the chicken to the prepared baking sheet and top each with marinara sauce and mozzarella cheese.
8. Bake for 20 minutes until the chicken is cooked through and the cheese is bubbly and golden.
9. Let rest for 5 minutes before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a preheated oven at 350°F until warmed through, or in a microwave for 2-3 minutes on medium power.
