Creamy Spinach & Mushroom Bake

Ingredients

1 lb fresh spinach
8 oz mushrooms, sliced
1 small onion, chopped
2 cloves garlic, minced
1 tbsp olive oil
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 cup breadcrumbs
1 tsp salt
1/2 tsp black pepper
1/2 tsp nutmeg

Instructions

1. Preheat the oven to 375°F (190°C).
2. Heat olive oil in a pan over medium heat and sauté onions and garlic until translucent.
3. Add mushrooms and cook until they release their juices.
4. Stir in spinach and cook until wilted, then season with salt, pepper, and nutmeg.
5. Transfer the mixture to a baking dish and pour over the heavy cream.
6. Sprinkle with Parmesan cheese and breadcrumbs evenly on top.
7. Bake in preheated oven for 20 minutes or until the top is golden brown.
8. Allow to cool slightly before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheat in the oven at 350°F (175°C) for 10 minutes or until heated through.
