Ingredients

2 cups arborio rice
4 cups chicken broth
1 cup Parmesan cheese, grated
1 cup white wine
1 medium onion, finely chopped
2 cloves garlic, minced
2 tbsp olive oil
Salt and pepper to taste
Fresh parsley for garnish

Instructions

1. Set the Instant Pot to Sauté and add olive oil.
2. Sauté the chopped onion and garlic until translucent.
3. Add arborio rice and toast for 2 minutes, stirring occasionally.
4. Pour in the white wine and let it simmer until absorbed.
5. Add chicken broth and stir well, then secure the lid.
6. Set the Instant Pot to Pressure Cook on High for 6 minutes.
7. Once done, allow natural pressure release for 10 minutes.
8. Carefully open the lid and stir in the Parmesan cheese until creamy.
9. Season with salt and pepper to taste and garnish with fresh parsley.

Storage

Refrigerate in an airtight container for up to 3 days.

Reheating

Reheat gently on the stove with a splash of broth or in the microwave until warmed through.
