Creamy Garlic Mashed Potatoes

Ingredients

2 lbs Yukon Gold potatoes
1 whole garlic bulb
1 cup heavy cream
4 tbsp unsalted butter
Salt to taste
Pepper to taste
2 tbsp chopped fresh chives (optional)

Instructions

1. Preheat your oven to 400°F (200°C).
2. Slice the top off the garlic bulb to expose the cloves. Drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
3. Peel and cube the potatoes, then boil in salted water until tender, about 15-20 minutes.
4. Drain the potatoes and return to the pot.
5. Squeeze the roasted garlic cloves into the pot with the potatoes.
6. Add heavy cream and butter to the pot.
7. Mash the potatoes until smooth and creamy. Season with salt and pepper to taste.
8. Stir in chopped chives before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheat in a microwave or on the stovetop over low heat, adding additional cream or butter to maintain moisture.
