Creamy Garlic and Chive Mashed Potatoes

Ingredients

3 lbs russet potatoes
1 cup heavy cream
4 tbsp unsalted butter
4 cloves garlic, minced
1/4 cup fresh chives, chopped
Salt and pepper to taste

Instructions

1. Peel and cube the potatoes.
2. Place the potatoes in a large pot and cover with water.
3. Bring to a boil, reduce heat, and simmer until tender, about 15 minutes.
4. Drain the potatoes and return to the pot.
5. In a small saucepan, heat the heavy cream, butter, and minced garlic over low heat until butter is melted.
6. Pour the cream mixture into the potatoes.
7. Mash the potatoes until smooth and creamy.
8. Stir in the chives, and season with salt and pepper to taste.
9. Serve warm.

Storage

Store leftover mashed potatoes in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in the microwave or on the stovetop over low heat, stirring occasionally, until heated through.
