Ingredients

8 oz elbow macaroni
1 ripe avocado, diced
1/2 cup Greek yogurt
2 tbsp lime juice
1/4 cup chopped cilantro
1/4 cup red onion, finely chopped
1 cup cherry tomatoes, halved
1/4 cup sweet corn
Salt to taste
Pepper to taste

Instructions

1. Cook the macaroni according to package instructions, drain, and rinse with cold water.
2. In a mixing bowl, mash the avocado and mix it with Greek yogurt, lime juice, salt, and pepper until smooth.
3. Add the cooked macaroni to the avocado mixture and toss until well coated.
