Ingredients
4 large apples
1/2 cup dried cranberries
1/2 cup chopped hazelnuts
1/4 cup brown sugar
2 tbsp unsalted butter
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 cup honey
1/2 cup apple cider
1/4 tsp sea salt
Instructions
1. Preheat your oven to 350°F (175°C).
2. Core the apples, ensuring to leave the bottom intact to create a well for the filling.
3. In a mixing bowl, combine cranberries, hazelnuts, brown sugar, cinnamon, nutmeg, and sea salt.
4. Stuff each apple with the cranberry mixture, packing it tightly.
5. Place the stuffed apples in a baking dish and top each with a small piece of butter.
6. Drizzle honey over the apples and pour apple cider into the bottom of the dish.
7. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
8. Remove the foil and bake for an additional 15-20 minutes, until the apples are tender and the tops are golden brown.
9. Let cool slightly before serving.
Storage
Store baked apples in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, warm the apples in the microwave for 1-2 minutes until heated through.
