Crab & Herb Stuffed Mushrooms

Ingredients

24 large white mushrooms, stems removed
8 oz lump crab meat
1/2 cup cream cheese, softened
1/4 cup mayonnaise
1/4 cup Parmesan cheese, grated
2 cloves garlic, minced
1 tbsp fresh parsley, chopped
1 tbsp fresh dill, chopped
1 tbsp lemon juice
1/2 tsp paprika
Salt and pepper to taste
2 tbsp breadcrumbs
1 tbsp olive oil

Instructions

1. Preheat your oven to 375°F.
2. Clean the mushrooms with a damp cloth and remove the stems.
3. In a bowl, mix cream cheese, mayonnaise, Parmesan, garlic, parsley, dill, lemon juice, paprika, salt, and pepper until well combined.
4. Gently fold in the crab meat, being careful not to break the lumps.
5. Stuff each mushroom cap with the crab mixture and place on a baking sheet.
6. Sprinkle breadcrumbs over the top of each stuffed mushroom.
7. Drizzle olive oil over the mushrooms.
8. Bake for 20-25 minutes or until the mushrooms are tender and the tops are golden brown.

Storage

Store in an airtight container in the refrigerator for up to 2 days.

Reheating

Preheat oven to 325°F and warm mushrooms on a baking sheet for 10 minutes.
