Corn on the Cob with Chili Lime Butter

Grilled corn on the cob is slathered with a spicy and tangy chili lime butter, offering a burst of exciting flavors that makes it a must-have side dish at any summer barbecue.

Ingredients

6 ears of corn, husked
1/2 cup unsalted butter, softened
1 tablespoon chili powder
1 lime, juiced and zested
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup chopped fresh cilantro
1/2 teaspoon garlic powder

Instructions

1. Preheat your grill to medium-high heat.
2. In a bowl, combine the softened butter, chili powder, lime juice, lime zest, salt, black pepper, and garlic powder.
3. Grill the corn for about 10-12 minutes, turning occasionally, until charred in spots.
4. Remove the corn from the grill and slather each ear with the chili lime butter.
5. Sprinkle with chopped cilantro before serving.

Storage

Wrap the grilled corn in aluminum foil and store in the refrigerator for up to 3 days.

Reheating

Preheat oven to 350°F. Place corn in foil and warm in the oven for 10 minutes or until heated through.
