Corn and Cheese Fritters
These crispy and golden Corn and Cheese Fritters are the perfect blend of sweet corn and rich, melted cheese, making them an irresistible snack for any time of the day.

Ingredients
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon smoked paprika
1/2 cup whole milk
1 large egg, beaten
1 cup sweet corn kernels, fresh or frozen
1 cup shredded cheddar cheese
1/4 cup chopped green onions
2 tablespoons butter or oil for frying
Instructions
1. In a large bowl, whisk together the flour, baking powder, salt, black pepper, and smoked paprika.
2. In a separate bowl, combine the milk and beaten egg.
3. Stir the wet ingredients into the dry ingredients until just combined.
4. Fold in the corn kernels, shredded cheddar cheese, and chopped green onions.
5. In a skillet, heat butter or oil over medium heat.
6. Drop spoonfuls of batter into the skillet, flattening slightly with the back of the spoon.
7. Cook for about 2-3 minutes on each side, or until golden brown and crisp.
8. Remove from the skillet and drain on paper towels.
9. Serve warm or at room temperature with your favorite dipping sauce.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, place fritters in a preheated oven at 350°F for about 5-7 minutes, or until warmed through.
