Coconut Mango Sago Pudding
A refreshing dessert from Southeast Asia, Coconut Mango Sago Pudding combines creamy coconut milk with juicy mangoes and chewy sago pearls for a delightful tropical treat perfect for hot days.

Ingredients
1/2 cup small sago pearls
2 cups water
1 1/2 cups coconut milk
1/4 cup granulated sugar
1 ripe mango, diced
1/2 teaspoon vanilla extract
Pinch of salt
Instructions
1. Rinse the sago pearls under cold water.
2. In a medium pot, bring 2 cups of water to a boil. Add the sago pearls and cook for 10-15 minutes until they become translucent, stirring occasionally.
3. Drain and rinse the cooked sago under cold water to remove excess starch.
4. In another pot, combine coconut milk, sugar, vanilla extract, and salt. Heat on low, stirring until sugar dissolves.
5. Add the cooked sago pearls to the coconut milk mixture and stir well.
6. Let the mixture cool to room temperature, then refrigerate for at least 1 hour.
7. Serve chilled, topped with fresh diced mango.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Best served chilled directly from the refrigerator. Do not reheat.
