Coconut Almond French Toast

Ingredients

4 large eggs
1 cup coconut milk
1/2 cup whole milk
1 tablespoon sugar
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1/4 teaspoon salt
8 slices brioche bread
2 tablespoons unsalted butter
1/2 cup shredded coconut (unsweetened)
1/4 cup sliced almonds
Maple syrup, for serving

Instructions

1. In a large mixing bowl, whisk together eggs, coconut milk, whole milk, sugar, vanilla extract, almond extract, and salt.
2. Dip each slice of brioche into the egg mixture, ensuring both sides are well-coated.
3. In a large skillet, melt 1 tablespoon of butter over medium heat.
4. Place dipped bread slices into the skillet and cook until golden brown on each side, about 3-4 minutes per side.
5. Remove the toast from the skillet and keep warm. Repeat with remaining butter and bread slices.
6. Toast shredded coconut and sliced almonds in a separate skillet over low heat until lightly golden, about 2-3 minutes.
7. Serve the French Toast warm, garnished with toasted coconut and almonds, drizzled with maple syrup.

Storage

Store leftovers in an airtight container in the refrigerator for up to 2 days.

Reheating

Reheat in a preheated oven at 350°F (175°C) for 5-7 minutes or until warmed through.
