Ingredients

1 lb elbow macaroni
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon Dijon mustard
1 lemon, zested and juiced
1/4 cup extra-virgin olive oil
1/4 cup chopped fresh parsley
1/4 cup chopped fresh dill
1/4 cup chopped green onions
1/2 cup diced red bell pepper
1/2 cup diced celery
1/2 cup chopped cucumber
Salt, to taste
Black pepper, freshly ground, to taste

Instructions

1. Cook the macaroni according to package instructions until al dente. Drain and rinse under cold water.
2. In a large bowl, whisk together mayonnaise, sour cream, Dijon mustard, lemon zest, lemon juice, and olive oil until smooth.
3. Add cooked macaroni, parsley, dill, green onions, red bell pepper, celery, and cucumber to the dressing and toss to combine.
4. Season with salt and black pepper to taste.
5. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Best served cold, but you can bring it to room temperature before serving. Do not reheat.
