Classic Yellow Squash Casserole

A delightful Southern-inspired dish, this Yellow Squash Casserole combines tender squash, savory onions, and a crunchy breadcrumb topping. It is the perfect side dish for family gatherings or holiday feasts.

Ingredients

2 lbs yellow squash, sliced
1 large onion, chopped
2 cups grated cheddar cheese
1 cup sour cream
1 cup crushed butter crackers
4 tbsp butter, melted
1 tsp salt
1/2 tsp ground black pepper
2 tbsp olive oil

Instructions

1. Preheat your oven to 350°F (175°C).
2. Heat olive oil in a large skillet over medium heat. Add sliced yellow squash and chopped onions, cooking until tender, about 10 minutes.
3. In a large bowl, combine cooked squash and onions with grated cheddar cheese, sour cream, salt, and pepper. Mix well.
4. Transfer the mixture to a 9x13 inch casserole dish, spreading evenly.
5. In a small bowl, combine crushed butter crackers with melted butter.
6. Sprinkle the cracker mixture over the casserole.
7. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.
8. Remove from oven and let cool for a few minutes before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in the oven at 350°F (175°C) for about 15 minutes or until warmed through.
