Classic Pumpkin Bread

Ingredients
1 3/4 cups all-purpose flour
1 cup granulated sugar
1/2 cup packed brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon baking powder
2 large eggs
1/2 cup vegetable oil
1/3 cup water
1 cup canned pumpkin puree
1 teaspoon vanilla extract
Instructions
1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, salt, cinnamon, nutmeg, cloves, and baking powder.
3. In a separate bowl, beat the eggs lightly. Add the vegetable oil, water, pumpkin puree, and vanilla extract, mixing until well combined.
4. Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
6. Bake in the preheated oven for 60-65 minutes, or until a toothpick inserted into the center of the bread comes out clean.
7. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Storage
Store the pumpkin bread in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
Reheating
To reheat, warm slices in the microwave for 10-15 seconds or wrap in foil and heat in a 350°F oven for 5-10 minutes.
