Classic Oven-Roasted Sweet Potatoes

Ingredients
4 medium sweet potatoes
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp cinnamon
1 tbsp fresh parsley, chopped
Instructions
1. Preheat your oven to 400°F (205°C).
2. Wash and scrub the sweet potatoes thoroughly.
3. Cut the sweet potatoes into uniform cubes, about 1 inch each.
4. In a large bowl, toss the sweet potato cubes with olive oil, salt, pepper, and cinnamon until evenly coated.
5. Spread the sweet potatoes in a single layer on a baking sheet.
6. Roast in the preheated oven for 25 to 30 minutes, stirring halfway through, until they are golden brown and tender.
7. Remove from oven and sprinkle with fresh parsley before serving.
Storage
Store cooled roasted sweet potatoes in an airtight container in the refrigerator for up to 3 days.
Reheating
