Classic Macaroni Salad

Ingredients

8 oz elbow macaroni
1 cup mayonnaise
2 tbsp apple cider vinegar
1 tbsp Dijon mustard
1 tsp sugar
1/4 tsp salt
1/4 tsp black pepper
1/2 cup diced celery
1/2 cup diced red bell pepper
1/4 cup diced red onion
1/4 cup chopped fresh parsley

Instructions

1. Cook the macaroni according to package instructions. Drain and rinse under cold water to cool.
2. In a large bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, sugar, salt, and black pepper.
3. Add the cooked macaroni, celery, red bell pepper, red onion, and parsley to the bowl with the dressing. Toss to combine.
4. Cover and refrigerate for at least 1 hour to let the flavors meld. Serve chilled.

Storage

Store in an airtight container in the refrigerator for up to 3 days.
