Classic Lemon Bread

Ingredients

1 1/2 cups all-purpose flour
1 cup sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, softened
2 large eggs
1/2 cup milk
Grated zest of 2 lemons
1/4 cup fresh lemon juice

Instructions

1. Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
2. In a large bowl, mix together the flour, sugar, baking powder, and salt.
3. In another bowl, cream the butter and then add the eggs, one at a time, mixing well after each addition.
4. Stir in the milk, lemon zest, and lemon juice until well combined.
5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
6. Pour the batter into the prepared loaf pan and smooth the top.
7. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
8. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Storage

Store lemon bread in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.

Reheating

To reheat, warm slices in the microwave for 15-20 seconds or in an oven preheated to 300°F (150°C) for about 5 minutes.
