Classic Hearty Potato Soup

A rich and comforting potato soup recipe with a creamy texture, perfect for cold weather and easy to make, satisfying all your comfort food cravings.

Ingredients

4 lbs Russet potatoes, peeled and diced
1 large onion, chopped
3 cloves garlic, minced
4 cups chicken broth
2 cups whole milk
1 cup heavy cream
1/2 cup unsalted butter
4 strips bacon, cooked and crumbled
1 tsp salt
1/2 tsp black pepper
1 cup sharp cheddar cheese, shredded
2 tbsp chives, chopped for garnish

Instructions

1. In a large pot, melt butter over medium heat. Add onions and garlic, sauté until translucent.
2. Add diced potatoes and pour in chicken broth. Bring to a boil, then reduce heat and simmer for 20 minutes or until potatoes are tender.
3. Using a potato masher or an immersion blender, mash potatoes to desired consistency.
4. Stir in milk and heavy cream, cooking until heated through.
5. Add salt, pepper, and most of the cheese, reserving some for topping, and stir until cheese is melted.
6. Serve hot, garnished with crumbled bacon, remaining cheese, and chives.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat on the stove over low heat, stirring occasionally until heated through.
