Citrus Herb Rotisserie Chicken

Ingredients
1 whole chicken (3-4 lbs)
1/4 cup olive oil
1 lemon, zested and quartered
1 lime, zested and quartered
1 orange, zested and quartered
4 cloves garlic, minced
2 tsp salt
1 tsp black pepper
1 tbsp fresh thyme leaves
1 tbsp fresh rosemary leaves
1 tbsp fresh parsley, chopped
1 tsp smoked paprika
1 tsp onion powder
Instructions
1. Preheat rotisserie oven to 375°F.
2. In a bowl, mix olive oil, citrus zests, minced garlic, salt, pepper, thyme, rosemary, parsley, smoked paprika, and onion powder.
3. Rub the mixture all over the chicken, making sure to get under the skin.
4. Stuff the chicken cavity with lemon, lime, and orange quarters.
5. Secure the chicken on the rotisserie spit.
6. Roast in the rotisserie oven for 1.5 hours or until the internal temperature reaches 165°F.
7. Let the chicken rest for 10 minutes before carving.
Storage
Store leftover chicken in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in the oven at 325°F until warmed through, or microwave on medium power until hot.
