Ingredients

4 lbs whole chicken
1/4 cup olive oil
2 tbsp lime juice
2 tbsp orange juice
1 tbsp lemon juice
1 tbsp white vinegar
1 tbsp honey
1 tbsp minced garlic
2 tsp paprika
1 tsp ground cumin
1 tsp dried oregano
1 tsp salt
1/2 tsp black pepper
1/4 cup chopped fresh cilantro
1/4 cup chopped fresh parsley
Zest of 1 lime
Zest of 1 orange

Instructions

1. Prepare the marinade: In a large bowl, whisk together olive oil, lime juice, orange juice, lemon juice, white vinegar, honey, minced garlic, paprika, ground cumin, dried oregano, salt, and black pepper.
2. Add the chicken: Place the whole chicken in the bowl with the marinade, ensuring it is fully coated. Cover and refrigerate for at least 2 hours, or overnight for deeper flavor.
3. Preheat the grill: Heat your grill to medium-high heat.
4. Grill the chicken: Place the marinated chicken on the grill, breast side down. Grill for 15 minutes, then flip and continue grilling for another 45-50 minutes, or until the internal temperature reaches 165°F.
5. Finish with herbs and zest: Remove the chicken from the grill and let it rest for 10 minutes. Sprinkle with fresh cilantro, parsley, lime zest, and orange zest before serving.

Storage

Store leftover chicken in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a preheated oven at 350°F for 10-15 minutes until warmed through.
