Ingredients
1 lb fresh salmon, skinned and deboned
1/4 cup finely chopped fresh dill
1/4 cup breadcrumbs
1 large egg
Zest of 1 lemon
2 tbsp fresh lemon juice
1/4 cup finely chopped green onions
1 tsp salt
1/2 tsp ground black pepper
2 tbsp olive oil
Instructions
1. Cut the salmon into small chunks and place them in a food processor. Pulse until finely chopped but not pureed.
2. In a large bowl, combine salmon, dill, breadcrumbs, egg, lemon zest, lemon juice, green onions, salt, and pepper. Mix well until evenly combined.
3. Form the mixture into 6 equal patties, about 3/4-inch thick.
4. Heat olive oil in a large skillet over medium heat. Add the patties and cook for 3-4 minutes on each side, or until golden brown and cooked through.
5. Remove from heat and let them rest for a minute before serving.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a skillet over medium heat for 2-3 minutes on each side or until warmed through.
