Citrus Basil Shrimp Scampi

Ingredients
1 lb large shrimp, peeled and deveined
3 tbsp unsalted butter
2 tbsp olive oil
4 cloves garlic, minced
1/4 cup fresh lemon juice
1/4 cup fresh lime juice
1/2 cup chicken broth
1/4 cup white wine
1/4 cup chopped fresh basil leaves
1/4 tsp red pepper flakes
Salt and pepper to taste
1 lb linguine pasta
2 tbsp grated Parmesan cheese
Zest of 1 lemon
Zest of 1 lime
Instructions
1. Cook the linguine according to package instructions until al dente. Drain and set aside.
2. In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat.
3. Add garlic and sauté until fragrant, about 1 minute.
4. Stir in the shrimp, season with salt and pepper, and cook until pink and opaque, about 2-3 minutes per side.
5. Remove shrimp from the skillet and set aside.
6. In the same skillet, add lemon juice, lime juice, chicken broth, and white wine. Bring to a simmer and cook until slightly reduced, about 3-4 minutes.
7. Stir in the remaining tablespoon of butter, lemon zest, lime zest, and fresh basil.
8. Return the shrimp to the skillet, tossing to coat in the sauce.
9. Add the cooked pasta to the skillet and toss everything together until well combined.
10. Sprinkle with red pepper flakes and Parmesan cheese before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 2 days.
Reheating
Reheat gently in a skillet over medium heat until warmed through, adding a splash of chicken broth if necessary to loosen the sauce.
